Can I just start by saying – I ADORE this salad. I was planning on making a ‘regular’ arugula salad and then saw the butternut squash that had been sitting on my counter for weeks…. The rest is history! This salad is the perfect combination to balance out both of these very powerful ingredients. The peppery and light arugula freshens up the richness and sweetness of the squash. Meanwhile, the squash brings a heartiness to what-would-be a simple green salad.
Garnish with juicy pomegranate seeds for an added explosion of flavor!
- Roasted Butternut Squash (30-45 min at 375 degrees)
- 1/2 Pomegranate
- Shaved Carrots
- Juice of 1 lemon
- Salt & Pepper
